Do you remove the boards from our location? |

No. We take them only as far as your receiving area,
into our portable shop where service is performed. Our shop is custom
equipped to provide excellent service. |

Will my food service areas experience any interruption? |

None. Because we work closely with the department
manager, we remove and service boards not in use at that time. |

Do you use a sander on the boards? |
| |
No. Sanding is a rubbing, abrasive process, unsuitable
for removing greasy soils. Sanding also forces particulates and
contamination into the boards, later released as cutting continues.
We use an industrial planer which has been set up especially for
plastic. It removes a few thousandths of an inch from the surface.
The planer leaves the surface smooth and free of contamination. |

How long are our cutting boards out of service? |

Usually from half an hour to one hour. Service to
a facility can be from one to eight hours depending upon how much
resurfacing is needed.
Service frequency is on average once a year, more frequently if
boards are used more intensely. |

How many times can a board be resurfaced? |
| |
Many times.
A 3/4" thickness can typically be resurfaced once a year for
5, 6, 7 or more years in a row. Resurfacing costs much less than
purchasing new boards. From a cost of new plastic perspective, this
is an extraordinary savings.
Once boards become unsuitable in some departments, they can be recycled
to others.

Do you offer any other services? |

Yes. We can custom cut boards to size, cut existing
boards to manageable cleaning sizes, and provide portable stainless
steel tabs to hold boards in place. We can service the wrapping
boards with metal hinges, replace missing screws and sharpen scrapers.
We also service scale boards or any other specialty boards you may

Are there any government regulations regarding
cutting board surfaces? |

Yes. The U.S. Public Health Service FDA food code
of 1993, amended in 1995 and 1997, "Chapter 1, Purpose and
Definitions, Parts 1-2 Definitions #81: "Smooth" means
(A) A food contact surface having a cleanability equal to or exceeding
that of 100 grit number 3 stainless steel." Chapter 4, Part
4-5: Maintenance and Operations subpart 4-501.2 cutting boards reads
as follow: "Surfaces such as cutting blocks and boards that
are subject to scratching and scoring shall be resurfaced if they
can no longer be effectively cleaned and sanitized, or discarded
if they are not capable of being resurfaced."
Also, Annex Chapter 3 Public Health reasons, Subpart 4-501.12 reads:
"Cutting surfaces such as cutting blocks and boards that become
scratched and scored may become difficult to clean and sanitize.
As a result, pathogenic micro-organisms transmissible through food
may build up or accumulate. These micro-organisms may be transferred
to foods that are prepared on such surfaces." |
